To replicate the taste, mix the aforementioned ingredients thoroughly in a large mixing bowl.

The Recipe How-To

Now that you have gathered all the ingredients, it’s time to start cooking! Follow this step-by-step guide to make a perfect batch of Odom Tennessee Pride sausage.

Before we jump into cooking, let’s get our materials ready. Using a large mixing bowl, combine 1 lb of ground pork with 1 tablespoon each of dried thyme, rubbed sage, and ground black pepper, 2 teaspoons of nutmeg and salt, and 1/8 teaspoons cayenne pepper. Mix thoroughly until everything is well-combined.

Once the mixture is ready, shape them into patties. For breakfast sausage patties, shape them in about 2-3 inch rounds that are about half an inch thick. For sausage roll, shape the mixture into a log about 2 inches wide.

Cooking on stovetop

You could cook the sausage patties on a skillet by heating around 2 tablespoons of oil at medium heat. Add the shaped patties and cook for eight to ten minutes until browned or cooked through.

If you are making sausage rolls, preheat your oven to 375°F (190°C). Place the formed rolls on a baking sheet and bake for 15-18 minutes. Make sure to turn them over occasionally so that they cook evenly.

Temperature check

To ensure that your sausage has reached a safe temperature, it’s important to use a meat thermometer. The internal temperature should reach at least 160°F (70°C) before serving.

– Herb choices: The original recipe features dried thyme, rubbed sage and nutmeg. However, feel free to experiment by using herbs like oregano, rosemary or marjoram to give your sausage a unique twist.

– Add cheese: For a savory twist, consider adding some shredded cheese into the sausage mix before cooking. Cheddar or parmesan cheese work well in this recipe.

– Serve it up differently: Beyond putting your breakfast sausage in patties or rolls, try making small breakfast sausage balls to pair with a homemade sausage gravy recipe or make country-style sausage biscuits. The options are endless!
